I START MY DAY with a cup of coffee and a light breakfast. This wasn’t my routine until I got older. In the heyday of my business life, I skipped breakfast and would have many cups of coffee at my office during the morning. It seemed the right thing to do at the time.
My most popular breakfast starts with a poached or pan-steamed egg, lightly buttered toast, and 2 strips of turkey bacon that I now top with milled ground pepper that I nuke in the microwave on a paper towel. The parsley is added to impress the reader. It makes the plate seem more appealing than it is.
In my journal, this breakfast comes in at 250 calories. That is pretty good for a guy counting and recording calories in my quest to "lose a few pounds." If I can now just reduce the portion size of my dinners I might have a fighting chance.
